I used a high-quality olive oil – Carapelli’s 100% Italian EVOO, which made it extra tasty. This dish is creamy, flavorful and easy to throw together for your festive gatherings 🤌🏼🫒🥖✨

What you’ll need:
- 1 32oz container whole milk ricotta (preferred over part-skim)
- @carapelliusa 100% Italian extra virgin olive oil
- Mixed olives
- Fresh garlic 
- Fresh and/or dried Italian herbs (rosemary, basil, thyme, red pepper flakes, salt, pepper)
 
In a large mixing bowl, empty one container of whole milk ricotta and drizzle with olive oil. Using an immersion blender or hand mixer, blend until smooth and fluffy. Spoon the whipped ricotta into serving bowl. Meanwhile - over low to medium heat on the stove, combine olive oil, olives, chopped garlic, and Italian herbs. Mix until well combined and heat until just warm. Pour olive oil mixture over ricotta. Serve warm with bread, crackers, or veggies to dip.

What you’ll need:
- 1 cup cane sugar
- 4 tbsp (room temperature) butter
- 1/2 cup half + half
- optional: coarse sea salt 

In a sauce pan, add sugar. Heat on low-medium heat, stirring constantly. After a few minutes, the sugar will start to crystalize. Continue to stir and the sugar will start to turn a golden brown. As you continue to stir, it will eventually turn into a more liquid consistency. Remove from the heat, add in butter and half and half and mix until well combined. The carmel will thicken as it cools. Option to mix in coarse sea salt for a salted caramel! 
Store in a glass jar in the refrigerator. Warm before using to create a thinner consistency.
