Prepping a big batch of lasagna soup before the hi Prepping a big batch of lasagna soup before the highly anticipated snowmageddon 🤪🥶❄️ The perfect hearty, cozy meal! 〰️What you'll need:- 1lb ground beef- 16oz chicken broth- 16oz tomato sauce - 1 yellow onion- 4 cloves garlic - 1 bag fresh spinach - 8-10 lasagna noodles - basil (fresh or dried)- salt and pepper - optional (but recommended 🤪) Calabrian chilis or chili flakes for a little spice! In a large saucepan or Dutch oven, lightly sautee the diced onion and garlic with a small amount of avo oil. Add the ground beef and cook until browned. Add in the broth and tomato sauce - mixing until well combined. Add the (washed) spinach, pieces of lasagna noodles. Simmer over medium until the noodles are soft, mixing frequently to ensure everything is cooked thoroughly. Sprinkle with fresh basil and salt/pepper to taste. Serve topped with spoonful of ricotta and fresh herbs! Stores well in the refrigerator - sometimes I add a small amount of broth or more tomato sauce when reheating as the noodles have a tendency to absorb extra liquid!
