One-Pan Vegetable Lettuce Wraps
These vegetable lettuce wraps are fresh, delicious, + flavorful! They’ll have you coming back for more + they are a great way to get a big serving of vegetables. I love serving them topped with my crispy baked tofu + creamy peanut soy sauce but sub with your favorite sauce!
As always with my recipes, I try to make them as versatile as possible. Feel free to swap out or add any veggies that you would like + serve with your choice of protein.
One-Pan Vegetable Lettuce Wraps
Ingredients
- 2 Zucchini
- 6 Carrots
- 1 Red Onion
- 1 carton mushrooms (of your choice)
- 4 cloves Garlic
- 2 tbsp Soy Sauce
- 1 tbsp Seseme Oil
- 2 tbsp hoisin sauce
Instructions
- Prepare your vegetables by chopping the zucchini, carrots, onion, mushrooms, + garlic.
- Add the vegetables to a skillet with sesame oil + cook on medium heat.
- As the vegetables begin to soften, add the soy sauce + hoisin. Stir often, ensuring that the vegetables are uniformly cooked.
- Once fully cooked, remove the skillet from the heat. Top with sesame seeds.
- Serve warm on iceberg or butter lettuce + top with your choice of protein.
Storage tip: I often make this recipe in large batches to eat throughout the week. It stores very well! I typically keep my vegetables + protein separate (especially my crunchy tofu so it doesn’t get soggy), heat individually, then serve over lettuce.
