Asian Cucumber Salad

Ingredients
  

  • 2 cucumbers
  • ½ red onion
  • 2 cloves garlic
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp apple cider vinegar
  • gochujang or chili garlic sauce
  • sesame seeds

Instructions
 

  • In a bowl, combine thinly sliced cucumbers, red onion, + chopped garlic.
  • For the dressing: top with soy sauce, apple cider vinegar, sesame oil, +/- gochujang or chili garlic sauce for a little spice! Sprinkle with sesame seeds + serve cold.
